Romantic Five Course Menu

I enjoy cooking more than most can imagine, so when my fiancé challenged me to make a romantic dinner I was more than ready to accept that challenge. Just for a tiny insight, my fiancé loves everything Italian, so when picking the cuisine I of course for obvious reasons choose to make an Italian Five-course meal including a drink, an appetizer, an entree, a side, and of course dessert (my personal favorite).

With the drink I let my Fiancé choose, and he decided to go simple and get some iced tea, and it cooled and refreshed the pallet while we ate the food.

Appetizer:

I went with something simple, fresh, and delicious…….. bruschetta. I started with a simple French baguette and I pan-seared it with some olive oil till it was toasty. Then I chopped some Tomatoes, basil, and minced garlic and mixed it with olive oil and salt. Lastly, I placed my mixed tomatoes on the baguette and drizzled some reduced balsamic vinegar and that was it.

Entree:

I decided to make a fettuccine pasta with a creamy sauce. As for the ingredients they are in the picture. Chopping some sweet grape tomatoes, shallots, mushrooms, basil, marinated artichoke hearts, minced garlic, and adding some vegan Parmesan cheese from “Follow Your Heart”. I sautéd all those ingredients with some olive oil and then added some garlic and onion powder, some chili flakes, salt, pepper, nutritional yeast, and lastly some vegan cream. And that was my sauce, I added the pasta tossed some vegan chicken and it was ready to serve.

Side:

For my side I went simple and easy, I got some local sourdough bread that had rosemary and garlic in it, and pan-seared it with butter till crispy. It was divine, and of course easy and my fiancé loved it.

Dessert:

Not long ago I went to “Fresh Market” and in their dessert section they had these delicious-looking croissants stuffed with whipped cream and fresh strawberries, so of course I had to recreate it but vegan. I started my heading to Whole Foods and in their baked goods section found some vegan croissants and then cut those in half. I sliced some fresh strawberries and added some sugar. Lastly, I whipped my vegan whipping cream with powdered sugar, vanilla extract, strawberry extract, and some salt, and assembled my croissants.


So that was the romantic Italian dinner I made, and it took me less than an hour to get it all done. You should try something like that and see what your family or significant other thinks.

These are just two of the products I used to make these wonderful dishes. The “Gardein Plant-Based Chicken” is the perfect substitute for anyone who misses that meaty touch in pasta…….. Please don’t get me started on the “CountryCrock Plant Cream” I swear it is the best-whipped cream substitute out there. I used it for both the pasta cream and the strawberry stuffed croissants.
